Liwet Rice



Liwet rice is the food of the town of Solo. Liwet rice is savory rice because there is a mixture of coconut.  served with vegetable squash, shredded chicken (chicken meat cut into small pieces) and areh (a kind of savory puree of coconut)
Solo city dwellers used to eat rice liwet at any time from breakfast until dinner. Liwet ordinary rice sold by traveling with a bamboo basket to carry her mother every morning or sold in the lesehan stall.

but because rice liwet been split into several regions, and of course well known in the Sunda. I will show liwet rice recipe from sunda.

Ingredients:
ingredients:
1 ltr Rice
1 ¼ lt water
Seasonings:
1 tablespoon salt
6 shallots btr
6 tablespoons vegetable oil (I used 3 tablespoons only)
Bay leaves 3 lb
(I added 1 stalk lemon grass in geprek)
Directions:
A. Rice washed and drained .. set aside
2. Saute onion until fragrant directly in the pan for meliwet.
3. Put the rice, stir briefly, add water, salt, bay leaves and lemon grass.
4. Cook over medium heat, stirring occasionally.
5. Reduce the heat the water has begun to diminish, then input that has been pan-fried fish over rice and sprinkle until blended.
6. Cook until rice is done ± 20-25 minutes. Total cooking rice is 45 minutes.
7. Serve while warm

pretty easy right?  Liwe rice good to eat with side dishes.  I think good with a fried egg, anchovies, tofu and tempeh. but can be added according to your individual tastes.
